The grapes are destemmed with berries kept whole and gently pressed without breaking the skins
which is a semi-carbonic maceration with a closed top for around 10 to 14 days
and black tea
the opportunity opened up for us to work with some fruit from Windmill Vineyard in the Dunnigan Hills
